Whole Baked Sea Bass

Ingredients:

1 whole sea bass, cleaned

3 cloves garlic, chopped

1 lemon cut into thin slices
1 teaspoon sumac

1 teaspoon Atlantic sea salt

Black pepper

Thyme
1/2 spicy green pepper, cut into thin rounds

2 tomatoes, peeled and coarsely chopped (to peel use a knife to mark an X around the bottom of the tomato, place in boiling hot water for a minute, rinse in cold water and the skin should come off easily) 
Olive oil

1 lemon (1/2 cut into thin slices, 1/2 for juice)

 

Preparation:

1. Preheat oven to 350 C or (180 F)

2. Arrange baking paper in the bottom of the baking dish and place the fish onto of the paper. Drizzle olive oil in the outside and side of the fish

3. Place inside the fish the chopped garlic, sea salt, coarsely chopped tomatoes, black pepper, and the hot pepper.

4. Arrange slices of lemons and thyme into the fish

5. Sprinkle the sumac and salt onto the fish and work into the fish (hands will work best for this)
6.  Drizzle a little more olive oil and juice from half a lemon over the fish

7. Place in the preheated oven and back from about 13 minute
